Booth One

Recently, restaurateur Rich Melman launched this modern American eatery as an ode to the legendary Chicago restaurant, The Pump Room. Booth One (named after The Pump Room’s VIP table) started with dinner, offering up dishes like lobster cappuccino with tarragon butter, filet mignon with English steak jam, and raspberry pavlova with vanilla mousse. This month they’re planning on expanding to include breakfast, brunch, and lunch, serving up Gold Coast opulence all day long.
